Guest guest Posted July 24, 2002 Report Share Posted July 24, 2002 YELLOW SALSA RICE 1 can (14-1/2 ounces)chicken-style broth 1/3 cup water 1/2 teaspoon ground turmeric 1 cup converted rice 1/4 cup prepared medium, or hot, salsa 1 medium tomato, chopped Salt and pepper, to taste Finely chopped cilantro or parsley, as garnish Heat chicken-style broth, water, and turmeric to boiling in medium saucepan; stir in rice and salsa. Reduce heat and simmer, covered, until rice is tender and liquid absorbed, 20 to 25 minutes; stir in tomato during last 5 minutes of cooking time. Season to taste with salt and pepper.
