5 Minute Carob Cake

*This recipe looks like it has possibilities. I've adapted it only by changing

the type of flour called for to make it gf. I've also changed the grain cereal

beverage (Postum) called for to a herbal-root beverage called Dalcopa (gf).

 

1 cup nuts of choice

2 cups water

1/3 cup carob powder

1/2 cup flax seed jell

2 tsp. vanilla

2 tsp. lemon juice

2 cups gluten-free flour blend

1 cup brown sugar or Sucanat

1 Tbsp. coffee substitute powder (Dalcopa) - may omit

2 tsp. baking powder

1 tsp. salt

 

Blend smooth first three ingredients. Stir blended items with next three

ingredients. Mix dry ingredients. Mix all ingredients together. Bake in oiled

8 x 12 pan at 350 degrees F. for 35 - 40 minutes. Check with toothpick. After

cake is cooled, melt gf carob chips and spread on cake for icing.
