Guest guest Posted July 24, 2002 Report Share Posted July 24, 2002 Parslied New Potatoes 8 small red potatoes, or 4 medium potatoes, halved salt to taste freshly ground black pepper 1 tablespoon olive oil 1/2 tablespoon chopped parsley 1. Place the potatoes in a large pot, cover with water and add a liberal amount of salt. Bring to a boil over high heat and cook until the potatoes are tender throughout, about 20 minutes. Drain well. 2. Heat the olive oil in a skillet over medium-high heat. Add the potatoes and sauté for 2 minutes.
