Guest guest Posted July 23, 2002 Report Share Posted July 23, 2002 MAPLE ALMOND GRANOLA Makes about 5 cups 2/3 cup maple syrup 2 tablespoons cold-pressed safflower oil 1/2 teaspoon vanilla 4 cups quinoa flakes 1 cup unblanched almonds (about 4 ounces), coarsely chopped 1. Heat oven to 300 F. 2. Heat syrup and oil in small heavy saucepan over high heat to boiling; boil 1 minute without stirring. Remove from heat; stir in vanilla. 3, Combine quinoa flakes and almonds in medium bowl; gradually stir in syrup mixture. Toss until ingredients are thoroughly combined, then spread on two lightly oiled 15-1/2 x 10-1/2x 1 inch baking pans. Bake in center of oven, stirring and tossing every 4 minutes, until mixture is crisp and dry, about 15 minutes. Do not allow to brown. Remove pans from oven to wire racks; let granola cool completely.
