Guest guest Posted July 21, 2002 Report Share Posted July 21, 2002 Carob Fudge with Granola Source: Country Kitchen Collection 1 cup dates 1 cup water 1/2 cup carob powder 1/2 cup water 1 cup peanut butter or other nut butter 1 cup chopped walnuts or other nuts 1 tsp. vanilla 2 1/3 - 3 cups granola, ground dry in blender (gf if necessary) Boil dates and water until soft. Blend smooth. Boil carob and 1/2 cup water for three minutes, stirring until smooth. Mix in remaining ingredients. Add enough ground granola to make a bar consistency. Press into greased pan, sprinkle with coconut and freeze. Remove from freezer 1/2 hour before serving. Serve cold or serve directly from freezer.
