Guest guest Posted July 19, 2002 Report Share Posted July 19, 2002 Sweet Potato and Pear Soup 2 tablespoons margarine 1 red onion, coarsely chopped 3 sweet potatoes, peeled and cut into 1-inch chunks 2 ripe Bartlett pears, peeled and cut into 1-inch chunks 5 cups vegetable stock Pinch of allspice Kosher salt Freshly ground pepper Melt margarine and saute onion in a large pot for 5 minutes. Add sweet potatoes, pears and stock. Bring to a boil over medium heat. Reduce heat and simmer until the sweet potatoes are tender, about 40 minutes. Add the allspice.
