Guest guest Posted July 19, 2002 Report Share Posted July 19, 2002 Coconut Sweet Potato Casserole 2 pounds sweet potatoes, cooked, peeled and cut into 1-inch chunks (about 4 cups) 2 apples, peeled, thinly sliced 2/3 C. maple syrup 1/4 C. ( 1/2 stick) margarine, melted 1/2 t. salt 2/3 C. sweetened flaked coconut Heat oven to 350 degrees. Place sweet potatoes in greased 13x9-inch baking dish; top with apples. Mix syrup, margarine and salt; pour over apples. Sprinkle with coconut; cover. Bake 30 minutes. Uncover. Bake 20 to 30 minutes or until apples are tender and coconut is lightly browned.
