Guest guest Posted July 16, 2002 Report Share Posted July 16, 2002 Hi all, Last weekend, I had a plantain banana (a type of banana that must be cooked to be eaten) which had become way overripe. I didn't want to throw it away, so I figured out a way to use it that was really delicious: Take a very ripe plantain banana (turning black and squishy), cut the ends off, and peel. Put in a bowl and mash with a fork. Add cornmeal until mixture reaches desired consistency. Spray a pan with oil, and heat to medium. Plop in some of the batter, enough to make a " fritter " about 3 or 4 inches in diameter. Continue until all batter is used. (Mine made about 4). Cook until lightly browned, then flip over and cook the other side. I ate mine drizzled with brown rice syrup, and I also tried it with nectarine preserves. Very yummy!
