Guest guest Posted July 16, 2002 Report Share Posted July 16, 2002 Cold Cucumber Soup 2 cups plain soy yogurt 1 medium cucumber, peeled, seeded, and chopped 1 cup chicken-style broth 2 Tbsp. lemon juice 2 Tbsp. orange juice (optional) 2 tsp. fresh oregano leaves, minced (may substitute cilantro) 1/2 tsp. garlic powder (or 1/2 clove garlic) Salt to taste In a bowl, stir together soy yogurt, cucumber, broth, lemon and orange juice. Add minced oregano to taste. Add salt and garlic powder. Chill at least one hour or serve the next day. Garnish with a fresh oregano (or cilantro) sprig. *For a less chunky soup, blend all ingredients in blender. Substitute 1 cup soy milk for one cup of the plain soy yogurt.
