Guest guest Posted July 14, 2002 Report Share Posted July 14, 2002 I got this recipe from the VGF recipe list. Try it with the new white or gold kiwis. It is wonderful. We also tried it with a little mango. Mmmmmm. We use white corn syrup (not brown) and skipped the lemon peel. Keith also made it with 1/2 c coconut milk and 1/2 c water - very creamy. I personally think it is way to sweet and one can just skip the corn syrup all together as the mangos and kiwis are lovely this year, but you can adjust for yourself. We have one of those Donvier Ice Cream Makers that you put in the freezer and then stir around when you want to make frozen goodies. Best $10 we ever spent at a garage sale - at least this year when it is getting really hot. BL Kiwi Fruit Gelato Source: alt.food.vegan 1 cup water 1/2 cup sugar 1/2 cup light corn syrup 4 Kiwifruit, pared 5 Tbs lemon juice 1/4 tsp lemon peel, grated Combine water, sugar and corn syrup in saucepan. Cook and stir 2 minutes or until sugar is dissolved. Puree kiwifruit in food processor or blender to equal 3/4 cup puree. Add lemon juice, peel and sugar mix. Pour into shallow metal pan and freeze for approximately 1 hour or until the mixture is firm, but not solid. When chilled, spoon into a chilled bowl and beat with an electric mixer until the mix is light and fluffy.
