Guest guest Posted July 11, 2002 Report Share Posted July 11, 2002 Date Walnut Spread with Flax Adapted from The Millennium Cookbook 1 cup pitted dates 1 cup walnuts, toasted 1 tablespoon light miso 10 ounces silken tofu 1 tablespoon maple syrup 2 tablespoons flaxseed oil 1/2 teaspoon ground nutmeg 1/2 teaspoon salt Soak the dates in warm water until soft, about 15 minutes. Drain. In a blender or food processor, combine the dates and all of the remaining ingredients and blend until smoothly pureed. Store in an airtight container in the refrigerator for up to 4 days.
