Guest guest Posted July 10, 2002 Report Share Posted July 10, 2002 Sesame Brown Rice Salad Source: Western Family Instant Brown Rice Box Dressing: 2 Tbsp. vegetable oil 2 Tbsp. sesame oil 2 Tbsp. rice vinegar (or lemon juice) 1 tsp. soy sauce (wheat free if necessary) 1/2 tsp. fresh ginger, minced 1/2 tsp. garlic powder 1/2 tsp. seasoned salt Rice/Vegetable Mixture 3 cups Instant Brown Rice, cooked and cooled 1 cup fresh snow peas, blanched 2/3 cup red onion, minced 1 (10 oz.) can chopped water chestnuts, drained 1 cup fresh mushrooms, sliced 1 Tbsp. sesame seeds, toasted Combine all ingredients for salad dressing. Set aside. In a separate bowl, combine rice/vegetable mixture ingredients. Pour dressing over rice/vegetable mixture. Refrigerate for 2 hours.
