Guest guest Posted July 8, 2002 Report Share Posted July 8, 2002 ***Rose's Favorite*** * Exported from MasterCook * Coconut Cream Pie Recipe By : Serving Size : 0 Preparation Time :0:00 Categories : Pies, Tarts & Pastries Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3 1/2 cups vanilla flavored rice milk 1/2 cup honey (or alternative sweetener) 6 tablespoons cornstarch 2 cups coconut 2 tablespoons coconut extract Save out 1/2 cup rice milk to blend with cornstarch for thickening. Bring the remaining ingredients to a slow boil and add thickening. Cook until thick. Cool completely on counter. Pour into baked graham cracker crust or pie shell. Chill. If gf is required, use gf pie shell.
