Coconut Cream Pie

Amount Measure Ingredient -- Preparation Method

3 1/2 cups vanilla flavored rice milk

1/2 cup honey (or alternative sweetener)

6 tablespoons cornstarch

2 cups coconut

2 tablespoons coconut extract

 

Save out 1/2 cup rice milk to blend with cornstarch for thickening. Bring the

remaining ingredients to a slow boil and add thickening. Cook until thick.

Cool completely on counter. Pour into baked graham cracker crust or pie shell.

Chill.

 

If gf is required, use gf pie shell.
