Guest guest Posted July 8, 2002 Report Share Posted July 8, 2002 * Exported from MasterCook * Carrot Slaw Recipe By : Serving Size : 0 Preparation Time :0:00 Categories : Salads & Dressings Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 cups shredded carrots 1/2 cup chopped green pepper 1/4 cup chopped onion 1 small red apples shredded unpeeled 1/4 cup plus 2 tablespoons raisins 2 tablespoons olive oil 2 1/2 tablespoons lemon juice 1 teaspoon stevia powder (or 4 tbsp. sugar alternative) 1/4 teaspoon celery seed 1/4 teaspoon salt 1/4 teaspoon dry mustard In medium bowl, combine veggies and apple. In a small sauce pan, combine remaining ingredients. Bring to a boil over medium-high heat. Pour over salad; Toss thoroughly. Chill 2-3 hours and serve.
