Garbanzo-Pimento Cheese

Source: The Oats, Peas, Beans & Barley Cookbook

2 cups soaked garbanzos (1 cup dry)

1/3 cup Brazil nuts

1/4 cup food yeast with B12

4-oz. jar pimentos

1/2 teaspoon onion powder

1/8 teaspoon garlic powder

1/4 cup lemon juice

1 to 1 1/2 cup water

1 teaspoon salt

Soak garbanzos 24 hours in 3 cups water. Drain off

soaking water. Scrape off brown husk from Brazil nuts

and cut into medium-size peices. Combine all the

ingredients in blender. Blend until very fine.

Place in double boiler over boiling water. Cook

covered 25-30 minutes or longer. Stir occasionally.

Mold in two small bread pans rinsed with cold water.

Chill, unmold, slice and serve. Yield: 2 pounds; 16

2-ounce servings.
