Guest guest Posted June 27, 2002 Report Share Posted June 27, 2002 * Exported from MasterCook * Favorite Meal 'o' Beans and Rice Serving Size : 1 Preparation Time :0:00 Categories : Beans And Legumes Main Dishes, Vegetarian Rice Vegetables Vegan Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/2 onion -- chopped 1 cup cooked brown rice 15 ounces canned tomatoes Italian or Mexican flavored 15 ounces black beans -- canned 10 ounces frozen spinach Mexican-type seasonings* *your choice of Mexican-type seasonings, like chili powder, or even packaged taco seasoning, or your favorite Italian seasonings like oregano, rosemary and thyme a few sprigs of cilantro, to taste. All measurements are approximate. Saute the onion in a bit of water or broth, add the rice, tomatoes, and black beans. If you don't want it to get too brown looking, drain the beans. Partially thaw, enough to break up the spinach, and add the spinach and seasonings last. If you don't like things too spicy, the amount of seasonings in the tomatoes might be enough. It's a bit too bland for my taste, especially if I don't have any seasoned tomatoes.
