Flax Egg Replacer

From Veggie Life, Winter 1999-2000

 

Keeps about 2 weeks, refrigerated. 1/4 cup replaces one egg.

 

1 cup flax seeds

4 cups water

 

In a blender, process flax seeds to a fine meal. Add water and blend.

PER 1/4 CUP: 37 CAL (64% from fat), 1g PROT, 3g FAT, 3g CARB, 2mg SOD, 0mg

CHOL, 1.6g FIBER.
