Guest guest Posted June 27, 2002 Report Share Posted June 27, 2002 Grilled Potatoes and Mushrooms 6-8 small potatoes, cut into 1/2-inch slices 1 lb button mushroom caps, stems removed 1-3 cloves garlic, finely chopped 1/3 cup olive oil 1/4 cup chopped fresh thyme 1 tsp paprika Salt and freshly ground pepper to taste Toss all ingredients in a mixing bowl to combine thoroughly. Grill over hot coals until tender and golden brown, turning once halfway through cooking. The potatoes will take about 8 minutes per side, the mushrooms about 5 minutes per side. Serves 4 to 6.
