Guest guest Posted June 23, 2002 Report Share Posted June 23, 2002 Pina Colada Fruit Cream Source: The Seventh-day Diet *The lemon juice is folded in at the last so that it will help thicken the cream; blended in too quickly or too soon, it will cause the mixture to thin. *If you cannot find Soyagen (a soy protein powder), you may use another brand of soy protein powder or 1/2 cup of cashew milk or soy milk, although the cream will not be as thick. 2 cups fresh or unsweetened canned pineapple chunks, drained if canned 4 medium-size very ripe bananas 1 cup unsweetened pineapple juice 1/2 cup Soyagen (soy protein powder) 1/4 cup honey (or alternative) 1 tsp. ground coriander 1 1/2 tsp. vanilla extract 1 1/2 tsp. coconut extract 1/8 tsp. salt 1 tsp. fresh lemon juice Place all ingredients except lemon juice in blender and blend until very creamy. Stop blender and slowly fold in lemon juice, stirring just a few times. Chill. Serve over fruit salad or other dessert. Makes: approximately 4 cups.
