Guest guest Posted June 23, 2002 Report Share Posted June 23, 2002 Blueberry Syrup Source: The Seventh-day Diet 3 1/2 cups fresh or unsweetened frozen blueberries 1 can (6 oz.) frozen apple juice concentrate, thawed 1/2 cup pitted dates 1 Tbsp. arrowroot 1/8 tsp. salt 1 tsp. fresh lemon juice If using fresh blueberries, wash them and remove stems. Set aside. Place in blender apple juice concentrate, 1/2 cup of the blueberries, pitted dates, arrowroot, and salt. Blend until smooth. Place blended mixture in saucepan and simmer over low heat, stirring constantly, until thickened and clear, approximately 5 - 10 minutes. Add rest of blueberries and lemon juice. Simmer over low heat briefly until heated (do not boil). *If using arrowroot, cook not only long enough to thicken, but enough so that it becomes clear, otherwise it will retain a powdery, undesirable taste.
