Guest guest Posted June 23, 2002 Report Share Posted June 23, 2002 Pineapple-Lemon Sauce Source: The Seventh-day Diet Delicious over pancakes, waffles, fruitcake, cereals, or fruit! 1 cup unsweetened pineapple juice 2 Tbsp. arrowroot 1/4 tsp. lemon extract 1/8 tsp. salt 2 cups unsweetened crushed pineapple, undrained 3 Tbsp. honey 1 Tbsp. fresh lemon juice 1 tsp. grated lemon peel Place pineapple juice, arrowroot (or cornstarch), lemon extract, and salt in blender and blend until smooth. Pour blended mixture into 1-quart saucepan. Bring to slow boil and simmer over low heat, stirring constantly, until thickened and clear, approximately 5 - 10 minutes. Remove from heat and add remaining ingredients. Mix well and cool.
