Southwestern Salsa

Amount Measure Ingredient -- Preparation Method

1 1/3 cups cantaloupe -- finely chopped

1/2 cup jicama -- peeled and finely chopped

1/3 cup red or green bell pepper -- finely chopped

3 tablespoon lime juice

4 teaspoon red onion -- finely chopped

1 tablespoon snipped fresh cilantro

1 fresh serrano (mild) chili pepper -- seeded and finely

chopped

1/4 teaspoon sugar (optional)

1 dash salt

 

In a medium mixing bowl combine cantaloupe, jicama, bell pepper, lime juice, red

onion, cilantro, chili pepper, sugar (if desired), and salt. Cover and chill for

2 to 24 hours. Two-tablespoon serving
