Soybean Rice & Lentil Salad

1 15-ounce can whole soybeans -- drained

1 cup cooked brown rice

1 cup canned kidney beans -- drained

1/2 cup canned lentils -- drained

1/4 cup ranch dressing (or alternative)

1/8 cup chopped red onion

4 cups torn red leaf lettuce

 

Combine ingredients in a large bowl, except the lettuce. Marinate for 1 hour in

the refrigerator. Serve over lettuce.

grams; cholesterol: 0 milligrams.
