Elephant garlic is not actually garlic but it is still a member of the same food family. You could try cooking both potatoes with some bay laurel leaves and sea salt. And then add a small amount of Hungarian Paprika, dry mustard and a pinch of pepper flakes when you are blending. The kind of paprika does make a difference.
