Guest guest Posted June 12, 2002 Report Share Posted June 12, 2002 * Exported from MasterCook * Wild Mushroom Baked Beans (adapted to gf) Recipe By : Serving Size : 0 Preparation Time :0:00 Categories : Beans & Legumes Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3 1/2 ounces shiitake mushrooms -- sliced 8 ounces baby bella mushrooms -- sliced (baby portabella mushrooms) 1 cup chopped onion 2 teaspoons minced garlic 2 tablespoons olive oil 2 tablespoons flour (gluten free such as potato, garbanzo, or cornstarch) 1 can (15 ounces) pinto beans 1 can (15 ounces) great northern beans 1 can (15 ounces) red kidney beans 1 cups vegetable broth -- (1-1/2) 3/4 teaspoon dried thyme leaves finely chopped parsley Saute mushrooms, onion and garlic in olive oil in large skillet until tender, 8 to 10 minutes. Stir in gf flour; cook 1 to 2 minutes longer. Combine mushroom mixture and remaining ingredients, except parsley, in 2-quart casserole dish. Bake uncovered at 350-degrees F, for 45 minutes. Sprinkle with parsley before serving. Makes 6 main dish servings (about 1 cup each) or 12 side-dish servings (about 1/2 cup each).
