TOFU MEAT BALLS

 

12 ounces firm tofu, drained

l/2 C minced walnuts

l/2 C minced onion

l T dried parsley

l tsp dried basil

l T miso or soy

l clove garlic pressed, juiced or minced

l/2 to l-l/2 C gluten-free bread or cracker crumbs (may substitute

quinoa flakes or cooked whole grain quinoa)

 

Mix together. Start with l/2 C crumbs and add as needed to form

balls. Fry, or bake 350o 20-30 min till browned. Makes about 30

balls.
