LaDonna * * * Carob Mint Pudding 1/2 cup liquid sweetener of choice 1/3 cup carob powder (or cocoa powder) 4 tsp. vanilla 1 tsp. peppermint extract 1/2 tsp. cinnamon (optional) 1/8 tsp. salt 1 1/4 lbs. tofu, well-drained or pressed Combine all ingredients in a blender and whiz until smooth and creamy. In small saucepan, mix: 1/2 tsp. agar-agar powder or 1 1/2 tsp. agar-agar flakes 1/2 cup water Stir to dissolve. Bring to a boil and simmer for 5 minutes. Then add to the tofu mixture quickly and blend until very smooth. Chill for 2 - 3 hours until set. For pie: fill a pre-baked pie shell (graham cracker or granola). Chill and enjoy! http://www.
