Guest guest Posted June 3, 2002 Report Share Posted June 3, 2002 Quinoa Stir Fry 1 sweet onion, cut into 1 " strips 2 ribs celery, cut into 1/2 " diagonal pieces 1 small zucchini, peeled and thinly sliced 1 yellow summer squash, unpeeled and thinly sliced 2 cups mushrooms, thinly sliced 3 - 4 Tbsp. Bragg's Liquid Aminos (or soy sauce) 1 red pepper, sliced into 1 " strips 2 medium carrots, shredded 1 basic recipe of cooked quinoa (recipe to follow) Saute' onion and celery until tender. Add the next four ingredients and stir fry until tender-crisp. Add the red pepper, carrots, and cooked quinoa and cook only until heated through.
