Guest guest Posted June 3, 2002 Report Share Posted June 3, 2002 Quinoa Corn Bread 1 medium sweet onion, finely chopped 1 Tbsp. Bragg's Liquid Aminos (or soy sauce) 2 cups cornmeal 1 cup quinoa flour (grind whole grain quinoa in a blender for 5 minutes) 2 tsp. salt 1 1/2 tsp. baking powder 1/2 tsp. baking soda 1 tsp. garlic salt 2 tsp. onion powder 1/3 cup applesauce 2 Tbsp. sweetener of choice 1 3/4 cups soymilk or almond milk Saute' onion and Bragg's Liquid Aminos until onions are tender. In a large bowl, combine dry ingredients. Set aside. In a smaller bowl, blend wet ingredients. Pour them over dry ingredients and mix only until blended. Add onion mixture and blend. Pour into a prepared baking 9 " x 9 " baking pan. Bake at 425 degrees for 25 - 30 minutes. Serve hot with a little pure maple syrup poured over the top.
