Guest guest Posted June 3, 2002 Report Share Posted June 3, 2002 Breakfast Quinoa 2 cups water 1 cup quinoa, rinsed 1/4 plus 1/8 cup maple syrup 1/4 cup unsweetened coconut, shredded 1 tsp. cinnamon 1/2 cup almonds, chopped coarsely In a 1-quart saucepan bring ingredients to a boil. Simmer on low for 20 minutes. Quinoa will become transparent. Add 1/2 - 3/4 cup almond, rice, or soy milk.
