Guest guest Posted May 30, 2002 Report Share Posted May 30, 2002 Creamy Rice Pudding 2 cups cooked brown rice 1 1/2 cups soy or nut milk 1/2 cup chopped almonds or filberts 1/2 cup raisins 1 tsp. lemon juice 1/4 - 1/2 tsp. grated lemon or orange rind 2 Tbsp. honey or 1/4 cup date butter 1/4 tsp. coriander 1 tsp. vanilla 1/8 tsp. salt pinch of anise (optional) Mix everything together. Pour into lighlty oiled 8 " x 8 " baking dish. Bake at 350 degrees for 45 minutes. Yield: 4 cups. Variation: For creamier pudding add an extra cup of milk and bake 10 more minutes.
