I have made a variation of this for church meals a couple of times and every one

justs gobbles it up. BL

 

Tropical Mango Salsa (from FreshMangoes.com)

************************

 

5 or 6 grape tomatoes (halved)

2 ears sweet white corn, kernels cut from cob and uncooked

1 medium onion, diced - (Vidalia is the best)

2 limes, juice only

chopped garlic cloves to taste

4 tbs.. cilantro, chopped finely

2 fresh mango, peeled and diced

salt and pepper to taste

chopped banana or anaheim pepper to taste

1 can of Black bean soup, drained but not rinsed

 

Directions: Mix everything together thoroughly, serve

immediately or chill. You can keep this in the fridge for up to

5 days.
