Guest guest Posted May 31, 2002 Report Share Posted May 31, 2002 Rice Salad 3 cups cold, cooked brown rice 1 1/2 cups diced raw zucchini 2 tsp. minced red onion 2 cups chopped tomatoes 1 1/2 cups finely chopped green pepper 1 cup finely chopped fresh parsley 2 tsp. salt 1/4 cup olive oil 1/4 - 1/2 tsp. garlic powder 2 Tbsp. lemon juice 1/2 cup chopped chives or scallions (with tops) Put all the ingredients into a bowl. Mix together well. Cover and chill. Garnish with parsley and paprika.
