Guest guest Posted May 31, 2002 Report Share Posted May 31, 2002 Secret Spaghetti Sauce 1 cup olive oil 1/4 cup vegan margarine 3 medium onions, chopped 3 cloves garlic, chopped 1 tsp. ground oregano (you can add a teaspoon of oregano leaves, if you wish) 3 bay leaves 1 Tbsp. salt 1 Tbsp. sugar 2 - 32 oz. cans whole or recipe-ready canned tomatoes 5 - 6 oz. cans tomato paste (or equivalent) 1/4 - 1/2 tsp. Tabasco sauce 1 - 2 cups water Saute onions and garlic in oil and margarine until caramelized. Add oregano, bay leaves, salt, and sugar; simmer for 2 - 3 minutes, stirring frequently. Add tomatoes, tomato paste, Tabasco sauce (the secret ingredient!), and 1 cup of water. Stir well; simmer with the lid on, for 2 hours, stirring as needed. Can add more water if necessary. Can also add canned mushrooms if desired, or fresh mushrooms, sliced and browned in a skillet.
