Asparagus Soup

This fresh asparagus soup takes less than an hour to prepare.

 

Serves 3-4

 

1 pound Asparagus, cut into 1/2-inch pieces

5 cups vegetable (or NotChicken) broth

1/2 cup Onion, diced

1 medium Potato, grated

To taste Salt and pepper

 

Add all ingredients to a medium saucepan. Bring to a boil, reduce the heat and

simmer until the asparagus is tender (about 20-30 minutes). Allow to cool

slightly. Place in a food processor or blender until smooth. Serve warm.
