Guest guest Posted May 30, 2002 Report Share Posted May 30, 2002 Fruity Rice Squares 2 cups brown rice 2 cups coconut 1 tsp. salt 2 tsp. vanilla 1/4 cup tahini or peanut butter 1/2 cup apple juice concentrate or 1/4 cup honey and 2 Tbsp. water Blend 1 cup dry rice on high speed for 30 seconds. Stop blender and stir contents. Repeat procedure two more times. Add 1 cup coconut to blended ricea nd blend together for 15 - 20 seconds more. Empty contents into bowl. Repeat steps again using second cup of rice and coconut. Mix all ingredients together well. Firmly press half evenly into lightly oiled 8 " x 8 " baking dish. Spread 1 cup of date butter or favorite dried fruit butter on top. Crumble remaining half on top of date butter. Press down lightly. Bake at 350 degrees for 40 minutes.
