Peanut Rice Loaf

Source: The Foster's Favorites

 

8 cups boiling water

3 tsp. salt

2 cups raw peanuts

1/4 tsp. savory

2 Tbsp. parsley flakes

1/4 tsp. marjoram

1/4 tsp. turmeric

1 onion, cut into chunks

2 cups uncooked brown rice

 

Blend all ingredients except rice with part of the boiling water. Put rice into

large casserole dish and pour the blended mixture over the rice. Mix. Place a

layer of cooked zucchini slices on top. Cover and bake at 350 degrees for 1/2

hour then at 250 degrees for 30 - 45 minutes. (If you leave the cover off, it

will splatter all over your oven!).
