Guest guest Posted May 28, 2002 Report Share Posted May 28, 2002 Millet Casserole Source: The Foster's Favorites 1 1/2 cups raw millet 1 1/2 cups tomatoes (may used canned tomato) 4 1/2 cups water 34 cup raw cashews, cleaned 1 onion, cut into chunks 1 tsp. onion granules 1 1/2 cups water 1 tsp. sweet basil 1 tsp.oregano 1 1/2 tsp. salt Put millet in casserole dish. Whiz tomatoes, cashews, onion and enough of the water to blend smooth. Add the seasonings and blend just enough to mix them in. Pour blended mixture over the millet and stir. Place a layer of cooked zucchini slices on top. (When zucchini is out of season, use frozen zucchini slices.).
