Guest guest Posted May 28, 2002 Report Share Posted May 28, 2002 Breakfast Rice Pudding Source: The Foster's Favorites 6 - 8 cups cooked brown rice 1 - 20 oz. can unsweetened crushed pineapple, drained 1/2 cup chopped raisins 3 large ripe bananas 3 - 4 Tbsp. orange juice concentrate 1/3 cup lemon juice 1/4 cup apple juice 1 1/2 tsp. vanilla 1 cup raw cashews, cleaned* 3/4 cup pineapple juice 1/2 cup hot water Combine firsth three ingredients in 9 1/2 " x 14 " baking dish and mix thoroughly. Blend remaining ingredients until smooth. Pour blended mixture over ingredients in baking dish and mix lightly. Bake at 350 degrees for 1 hour. NOTE: A few less cashews can be used and the taste not changed; it will jest be slightly less rich. You may add more raisins or other dried fruit for a more fruity taste.
