Guest guest Posted May 24, 2002 Report Share Posted May 24, 2002 Mexican Lasagna White Corn Tortillas Can of Pinto Beans (or other bean of your choice) Can of diced Tomatoes (can be fresh diced, if you prefer) Can of Corn (or frozen corn, if you prefer) Enchalada Sauce (caned or prepared) Vegan Soy Cheese of your choice (can be omited) Mixed beans, corn, tomatoes together in a skillet with enchalada sauce. Simmer together until warmed through. In a round casserole dish layer the sauced corn tortillas with the bean, corn, tomato mixture & cheese. Cook in microwave for approx. 5 mins. To warm through and melt soy cheese. Can be topped with Tofutti soy sour cream.
