Pecan-Maple Waffles

 

1 cup quinoa flour

1/4 cup pecans, ground fine

1/4 cup maple syrup

1/4 tsp. lecithin

1 tsp. salt

1 Tbsp. oil

1/3 cup soy milk plus 2 Tbsp.

1 Tbsp. oil

 

Beat lecithin into soy milk. Add salt, oil, maple syrup and stir well. Add

pecans and quinoa flour. Beat well. Set aside for 15 minutes. Drop off

spoonfuls onto hot waffle iron. These are crisp and good. Spread with vegan

margarine and syrup or spread with mashed avocado and eat in hand as a cracker.
