Guest guest Posted May 22, 2002 Report Share Posted May 22, 2002 Carob Chip Cookies 1/3 cup oil 1/2 cup pure maple syrup 1 teaspoon vanilla extract 1 egg substitute (Ener-G) 1 3/4 cups brown rice flour 1 teaspoon baking soda 3/4 cup carob chips (unsweetened) dash allspice (optional) Oil two baking sheets and preheat oven to 375 degrees F. In a medium sized mixing bowl, combine oil, maple syrup, and extract. Add the egg substitute to the oil mixture. Gradually stir in flour and baking soda to form a stiff batter. Fold in carob chips and drop by the teaspoon full onto the baking sheets. Bake for 10-15 minutes until lightly browned. Remove from oven and cool. Makes 3 1/2 to 4 dozen.
