Guest guest Posted May 22, 2002 Report Share Posted May 22, 2002 Greek Potato Salad (as posted to Recitopia by Ginger) 3 md Potatoes; slice 1/4 " thick; boiled until tender 1 1/2 oz sun-dried tomatoes; chopped 1 c English cucumber 1/2 c red onion; sliced 4 oz soy feta, crumbled 1/2 c Greek olives; pitted 1 clove garlic; minced 1 tb fresh oregano or 1 tsp dried. Salt and pepper to taste LEMON DRESSING: 1 c olive oil, extra virgin 2 1/2 tbs lemon juice 4 cloves garlic; minced 1/4 c fresh oregano; chopped or 2 tsp dried oregano Salt and pepper Mix salad ingredients.
