Guest guest Posted May 22, 2002 Report Share Posted May 22, 2002 Fruit Salad 1 cup large-size pearl tapioca 1 cup sugar (or alternative sweetener) 1 large package frozen strawberries 1 large can crushed pineapple 2 Red Delicious apples, unpeeled, diced 3 oranges, peeled, membrane removed (or 1 can of mandarin oranges) 3 bananas, sliced 1 cup halved red seedless grapes 1/2 - 1 cup chopped walnuts or pecans 1 cup tofu whipped topping (optional) Soak tapioca overnight in 3 cups water. Do not drain. Pour into a medium saucepan, add one or two cups water. Add sugar; bring to a boil, stirring frequently for about 30 minutes or until tapioca is translucent. Set aside for 2 - 5 minutes. Stir in frozen strawberries; let cool. Add diced apple. Stir in oranges, bananas, grapes, and nuts. Cool in refrigerator. Serve with or without tofu whipped topping.
