Guest guest Posted May 21, 2002 Report Share Posted May 21, 2002 Baked Parmesan Potatoes Serve these potatoes as a side dish with roast beef or pork Serves 4 4 Potatoes, large 2 Tablespoons ghee or coconut butter, melted To taste Salt and pepper 1/4 cup Soy Parmesan cheese, grated 2 Tablespoons Italian-style GF breadcrumbs (very dry) Pre-heat the oven to 375. Slice the washed potatoes 3/4 of the way through (about 1/4 inch thick). Place on a lightly oiled baking sheet. Drizzle the butter over the potatoes. Season. Bake for 45 minutes. Mix together the cheese and breadcrumbs. Sprinkle over the potatoes, return to the oven and bake for 20 minutes longer (or until lightly browned).
