Guest guest Posted May 21, 2002 Report Share Posted May 21, 2002 Potato Salad 2 cups cooked, cubed potatoes 1 cup finely diced celery 1/4 - 1/2 cup diced onions 1/4 - 1/2 cup sliced olives 1 1/2 cups tofu mayonnaise 1 Tbsp. lemon juice 1 tsp. onion powder 1/4 tsp. salt 2 Tbsp. chopped parsley or 1 Tbsp. dried parsley Stir all ingredients together.
