In the archives I saw a couple chocholate cake recipes and a carrot cake recipe. Which would you recommend for this occasion/age group (children)? Also, for the carrot cake recipe, could you make a cream cheeze frosting with Tofutti cream cheese and powdered sugar? Or is ther a better frosting for this cake? Thanks very much! Guest guest Posted May 21, 2002 Report Share Posted May 21, 2002 Beth, I haven't made the carrot cake yet, but I think the Toffuti cream cheese mixed with powdered sugar would be good. Another alternative is to mix the vegan cream cheese with pure maple syrup (or brown rice syrup). It makes a creamy and delicious frosting. I have made the chocolate cake recipe in our archives many times, though, and it is always a hit. My niece, nephews, and sons (all teen-agers) devoured it last time I baked it! None of them are on a gf diet, but that didn't make a bit of difference to them! It is quite rich. . .and we found it doesn't really " need " a frosting unless you want a traditional cake. A sprinkling of powdered sugar is nice on the top of the dark chocolate. We've also substituted carob for the cocoa in this recipe and it works well.
