Guest guest Posted May 20, 2002 Report Share Posted May 20, 2002 Summer Rice Salad 1 avocado, peeled and diced 3 Tbsp. lemon juice 1 1/3 cups long-grain brown rice, cooked 1/2 lb. pineapple pieces 3 Tbsp. cashew nuts 6 green onions, finely chopped 2 Tbsp. olive oil 1 clove garlic sea salt to taste 1/2 red pepper, thinly sliced Pour 1 Tbsp. lemon juice on the avocado flesh to prevent discoloration. Combine rice, avocado, pineapple, cashews, and green onions. In a blender put teh 2 Tbsp. lemon juice, olive oil, garlic, and salt. Blend until smooth. Pour the dressing over the salad.
