Guest guest Posted May 18, 2002 Report Share Posted May 18, 2002 White Bean and Tomato Soup 2 tsp. olive oil 1 cup chopped onion 4 cloves garlic, crushed 2 cups vegetable broth, canned (or make your own) 2 1-pound cans tomatoes, chopped, undrained 1 19 ounce can white beans (cannellini or Great Northern beans), rinsed and drained 3 1 x 3-inch strips orange peel 1 tsp. dried mint leaves 1/2 tsp. sugar salt & peper to taste Heat oil in large saucepan over medium heat. Add onion and garlic. Cook, stirring frequently, 3 minutes. Add remaining ingredients, except salt and pepper. Bring mixture to a boil, then reduce heat to medium-low, cover, and simmer 45 minutes.
