Cashew Cream

1 cup raw cashews or very lightly toasted and cooled

1/4 cup water

 

Puree in a blender until smooth. Add more water if necessary. You may have to

blend for several minutes. If you want a sweeter finished product, try adding

some maple syrup. Cashew cream makes a great topping on fruit or anything you

would use whipped cream. Stores in the refrigerator for 2 weeks or freeze until

ready to use.
